The free gelato recipe calculator that balances every batch
GelatoLator is a free gelato recipe calculator that turns any set of ingredients into a balanced recipe. Enter your milk, cream, sugars, and stabilizer and it computes fat, milk solids (MSNF), sugar, total solids, PAC, sweetening power (POD), and serving temperature in real time — the same numbers professional gelato makers use to control texture.
Why balancing a gelato recipe matters
A recipe that looks fine on paper can still freeze into an icy block or turn out too soft to scoop. Balance is the difference: too little sugar and PAC and your gelato freezes hard; too much and it never sets. The balance panel shows each metric against its target range so you can see exactly what to adjust before you churn.
How to use the calculator
Load an example recipe — Classic Vanilla Gelato, Fior di Latte, or a fruit sorbet — then change any ingredient weight and watch every metric update instantly. Green means in range, orange is workable, red flags a likely texture or freezing problem. Switch between dairy gelato, fruit sorbet and ice cream to load the right targets for each.
No account is needed to balance a recipe. only to save recipes or open them on another device.
